Allée Bleue Sauvignon Blanc 2021

Origin: Walker Bay

Farm location: R45 Franschhoek Valley

Winemaker: Van Zyl du Toit

Grape varieties: 100 % Sauvignon Blanc

Style of wine: Dry white wine

Vinification: The grapes were sourced from selected vineyards in the Walker Bay area. Picked at optimal ripeness to ensure the freshness that Sauvignon is renowned for, these grapes were harvested at night and stored in a cool room until being sorted, crushed and pressed the following day. Some skin contact was done to enhance flavours. Lees rubbing of 4 days was done at 3°C to extract the delicate fruit flavours. The juice was racked and inoculated with yeast and cold fermented in tank until dry. The wine was aged on the lees for 2 months before racking and sulphuring to ensure a silky aftertaste. Another 2 months of lees aging was done prior to bottling.

Winemaker’s notes: Star light hue with shades of green. Sweet tropical fruit invites you on the nose. This is followed by intense passion fruit aromas well supported by hints of green pepper and typical herbaceousness. The palate is fresh and lively with loads of summer flavours and a clean, crisp finish.

Food pairing: Light vegetarian pasta with fresh Allée Bleue herbs. Scallops in a fresh citrus jus topped with marinated orange peel.

Allée Bleue Shiraz Rose 2021

Origin: Franschhoek

Farm location: R45 Franschhoek Valley

Wine maker: Van Zyl du Toit

Grape varieties: 85 % Shiraz, 15 % Semillon

Style of wine: Dry Rosé wine

Vinification: Handpicked from select vineyards on Allée Bleue farm. Limited skin contact to extract vibrant pink colour and cool fermentation to retain distinctive fruitiness.

Winemaker’s notes: Made predominantly from Shiraz grapes . Vibrant bouquet bursts of strawberry aromas give way to a fresh palate of red berries, candyfloss and hint of Turkish delight with spicy acidity that demands a second glass.

Food pairing: Ideal partner for Alfresco styled luncheons. Pairs well with big flavours such as anchovy, garlic and other spices. Works well with spicy grilled prawns, paella and salad niçoise. Serve well chilled.

Allée Bleue Pinotage 2018

Grape varieties:  98% Pinotage, 2% Viognier

Style of wine:  Wooded Red Wine

Vinification:

The grapes were sourced from a selected vineyard on our estate and also an old vineyard in Piekenierskloof (planted 1976). We have been farming these special blocks differently for the past 8 years, and this wine is a culmination of those efforts. After harvesting, sorting and cooling, the grapes were crushed and a cold soak done for 4 days at 7 °C. After inoculation with a selected yeast strain, the punch downs started intensely for only 4 days before pressing at 8 oB. This ensures a supple and smooth Pinotage. The finished wine underwent malolactic fermentation in the barrel and further maturation for 16 months before blending and bottling.

Of the barrels used, 50% were new and the rest 2nd and 3rd fill. We also use 5 % American Oak in this wine.

Winemaker’s notes:

Intense brick red colour. Upfront fruit bringing to mind ripe cherries and plums followed by sweet vanilla pods , liquorice and some cedar wood,
all reflecting the cultivar. The palate is rich, soft and very elegant. A full flavoured Pinotage that depicts the terroir and cultivar

Food pairing:

The wine is ideal for Springbok Loin or Beef Wellington with a berry jus and glazed vegetables.

 

Allée Bleue Brut Rosé 2016

Grape varieties: 56 % Pinot Noir, 44 % Pinotage

Style of wine: Bottled fermented sparkling wine (MCC)

Vinification: Made in the traditional way, this wine was blended using only the cuvée (first pressing). A blend of Pinot Noir and Pinotage was used to emphasise the fruit on this Brut Rosé. After bottling, the wine spent more than 18 months on the lees to develop the delicate brioche flavours that these wines are known for. Disgorgement took place in March 2020 and the wine will develop further richness on the cork. Drink now or in the next 2-3 years.

Maturation: Tank fermented and then bottle fermented and aged for more than 18 months.

Winemaker’s notes: A fresh and lively MCC filled with flavours of strawberries, rose petals and candyfloss. The palate is clean and refreshing with great balance and zesty minerality. A great sparkling wine for those special friends and moments in life.

Allée Bleue Chenin Blanc 2020

Grape varieties:  91% Chenin Blanc, 6% Viognier and 3% Sauvignon Blanc

Style of wine:  Wooded Dry White Wine

Vinification:
Grapes were sourced from selected areas vineyards in the Walker Bay and Coastal region. The grapes were picked at optimal ripeness to ensure the rich ripe flavours Chenin is known for. The grapes were sorted, pressed and then settled. The juice was racked and inoculated with yeast and after doing 50% of the ferment in tank it was transferred to barrel to complete the fermentation.

Wood maturation:
15% NFO and the rest 2nd, 3rd and 4th fill barrels of which all are 400 liter.

Winemaker’s notes:
The wine has a pale straw colour with green tinge. The intense aromas of tropical fruit and well supported by an elegant vanilla and nutty bouquet. The palate is rich and vibrant with layers of sundried fruits, nougat and lemony aftertaste. The rich and ripe flavours are in perfect harmony with the zesty minerality

Serve this delightful Chenin with rich seafood dishes such as seared Tuna with balsamic reduction, flame grilled line fish with lemon butter and grilled vegetables or West Coast mussels in a creamy white wine sauce.

Allée Bleue Shiraz 2019

Grape varieties:  92% Shiraz, 8% Viognier

Style of wine:  Wood matured Dry Red Wine

Vinification:
The grapes come from a selected vineyard on the farm itself. After harvesting, sorting and cooling the grapes were crushed and then put in the red wine fermenters and a cold soak done @ 7 °C for 4 days. After inoculation with yeast the pump overs started to extract the colour and flavours. The finished wine underwent MLF in barrel and further maturation for 15 months prior to bottling. The wine was matured in 5% American oak and the rest all French Oak – 55% of the barrels were new.

Winemaker’s notes:
Intense deep red colour. Powerful bouquet of violets, cinnamon and chocolate followed by ripe cherries. The palate is smooth and silky, packed with berry fruit and spicy nuances.

Food pairing:
Ostrich kebabs basted with red currant jelly and freshly ground pink peppercorns and finished with a Shiraz reduction. Medallions of Springbok rubbed with cumin and flash roasted – served with spiced beetroot.

Grape varieties: 53 % Pinot Noir / 47 % Chardonnay

Style of wine: Bottled fermented sparkling wine (MCC)

Vinification: Made in the traditional way, this wine was blended by only using the cuvee (first pressing). A blend of Pinot Noir and Chardonnay was used to emphasise the richness and elegance of this wine. The Chardonnay part was fermented in older barrels and underwent MLF. After bottling, the wine spent 36 months on the lees to develop brioche and complex nutty flavours that these wines are known for. Disgorgement took place in December 2018 and the wine developed further richness on the cork. Drink now or in the next 3-5 years.

Winemaker’s notes: A classic blend of Pinot Noir and Chardonnay makes this a true MCC. A bouquet of toasted nuts, brioche, candyfloss and citrus speak of the passion involved in making a wine of such class. The palate is rich and complex, with classic flavours of baked bread and marzipan.

After bottling, the wine spent 36 months on the lees to develop brioche and complex nutty flavours that these wines are known for. Disgorgement took place in March 2020 and the wine developed further richness on the cork. Drink now or in the next 4-7 years.
