L ‘Amour Toujours 2016
The Who:
A blend of Cabernet Franc 48 %, Cabernet Sauvignon 26 %, Merlot 21 %, and Petit Verdot 3 %
The How:
The grapes were sourced from selected mountain vineyards in the Banghoek area, a ward in Stellenbosch for their individuality. After harvesting, and cooling, the grapes were sorted, crushed and then put in red wine fermenters and a cold soak done at 7° C for 4 days. After inoculation with selected yeasts, the pumpovers started on all but the Merlot on which we prefer to do manual punch downs to extract the colour and flavour. Extented maceration of up to 24 days also lends depth of flavours and structure. The finished wine underwent MLF in barrel and further maturation for 18 months before carefully putting together the blend prior to bottling. All the barrels used were French oak, with 60 % new and the rest 2nd fill.
The What:
Delicate flavours of fynbos, cedar and cigar box, all beautifully wrapped in blackberry fruit. The palate is reminiscent of spice, dark chocolate and cinnamon with elegant and soft tannins. This is a unique wine which will intrigue even the best connoisseur.
The Details:
Will age beautifully over the next 5-7 years. Paired with confit of duck or a rich and delectable oxtail potjie with baked sweet potatoes – this wine brings out the heart in any meal.

Allée Bleue Black Series Single Vineyard Syrah 2016
The Who:
Made from the Shiraz Clone, SH 99, manicuring the vineyard, green harvesting to limit the crop, and a winemaker that has spent some time in Côte-Rôtie, has all contributed to this single vineyard wine.
The How:
Most of the work happens in the vineyard. In the cellar a 5 day cold soak and sufficient delastages. After fermentation the wine spends another 30 days on the skins, and goes through malolactic fermentation in barrel.
The What:
A brooding Shiraz with heaps of white pepper spice, ripe plums, violets, cinnamon and a hint of liquorice on the nose. The palate is super elegant and soft with all the flavours pulling through to the palate.
The Details:
A winemaker’s selection of the six best barrels, 80% new French Oak, matured for 16 months prior to being bottled unfiltered and unfined. Enjoyment will be further enhanced by decanting 30 minutes prior to drinking, but this wine can be cellared for at least 7 to 10 years.

Allée Bleue Black Series Isabeau Chardonnay 2020
The Who:
100% Chardonnay, Clone CY 95 – Grapes were sourced and selected from the oldest vineyard on our farm, circa 1990.
The How:
After whole bunch pressing the juice underwent natural fermentation in a split of amphora and French oak barrels. Only 30 % of the wine underwent malolactic fermentation and regular batonnage during the 1st 100 days to help add length and depth of flavour. After 10 months the wine was blended, given a light filtration and bottled. The wine spent another year in bottle before release, adding even more character and richness.
The What:
A myriad of flavours welcome you to this enticing wine. Stone fruit, citrus and an underlying hint of oatmeal. On the palate the richness of the partial malolactic fermentation adds complexity and rounds off the quince, citrus and “smoors” that play around in your mouth.

Allée Bleue Black Series Old Vine Pinotage 2018
The Who:
Piekenierskloof un-grafted bush vine Pinotage planted in 1976. A really good start to make a fantastic example of the cultivar.
The How:
Grapes were harvested, hand sorted and then crushed. 4 days cold soak and then inoculated before regular punch downs. Pressed and straight to barrel. After maturing for 16 months, the three best barrels were selected to make this release.
The What:
All the berries are here, strawberry, raspberry, blackberries and plums. Wrapped in a layer of fine dark chocolate and offset with a touch of liquorice. The mouthfeel is soft and silky with just enough tannin. This wine will evolve and mature into something really special over the next 4-7 years.
